How egg sizes convert
US egg sizes are defined by the minimum weight of a dozen, not of each egg. The USDA Agricultural Marketing Service lists minimum net weights per dozen of 15 ounces for Pee Wee, 18 for Small, 21 for Medium, 24 for Large, 27 for Extra Large and 30 for Jumbo. Dividing by 12 gives a minimum of 1.5, 1.75, 2, 2.25 and 2.5 ounces per egg for Small through Jumbo. This calculator compares sizes using those minimum weights, so it is an estimate: the eggs in a carton vary around the size minimum.
Worked example. A recipe needs 3 jumbo eggs and you have medium. Jumbo is 30 ounces a dozen, medium 21, so 3 × 30 ÷ 21 = 4.3 medium eggs, or about 4½.
Eggs in tablespoons. Utah State University Extension gives a raw large egg as about 3 tablespoons, a yolk as 1½ tablespoons and a white as 2 tablespoons. Whisking an egg and measuring out the fraction you need is the practical way to handle half-egg amounts.
Replacements. Texas A&M AgriLife Extension lists, for one whole egg in baking: ¼ cup egg substitute, or 2 tablespoons of mayonnaise (for cakes), or ½ teaspoon baking powder plus 1 tablespoon vinegar plus 1 tablespoon liquid (baking only). These work in cakes and quick breads but not as a 1:1 swap in custards, meringues or recipes where eggs are the main structure.
Frequently asked questions
How many medium eggs equal one large egg?
By USDA minimum weight a large egg is 24 ounces a dozen and a medium 21, so 1 large equals about 1.14 medium eggs. For one or two eggs the difference is small; for several, scale by weight as above.
How many tablespoons is one egg?
Utah State University Extension gives a raw large egg as about 3 tablespoons, a yolk about 1½ tablespoons and a white about 2 tablespoons.
What can I use instead of an egg in baking?
Texas A&M AgriLife lists ¼ cup egg substitute, or 2 tablespoons mayonnaise for cakes, or ½ teaspoon baking powder with 1 tablespoon vinegar and 1 tablespoon liquid. They suit baking, not every recipe.
Are Canadian egg sizes the same as US sizes?
This tool uses USDA minimum weights per dozen. If your carton follows another grading system, such as Canada's, treat the result as an approximation and use the weight printed on the carton if there is one.

Scope
Egg size changes by hen age and breed, and cartons vary around the size minimum. Weight-based swaps are estimates. Raw and undercooked egg carries food safety risks, so follow your local food safety guidance.
