Butter measurements explained

King Arthur Baking's ingredient weight chart gives butter as 8 tablespoons (½ cup) = 4 ounces = 113 grams. A US stick is 8 tablespoons, so one stick is 113 grams, a cup (two sticks) is about 226 grams, and one tablespoon is about 14 grams. The calculator is built on that single figure and shows ounces to the second decimal because 113 g is 3.99 oz.

Worked example. A recipe asks for 250 grams of butter. 250 ÷ 113 = 2.2 sticks, or 17.7 tablespoons, or 1.1 cups.

Swaps. Texas A&M AgriLife Extension lists, for 1 cup of butter: 1 cup regular margarine or 1 cup vegetable shortening (for baking), or an equal amount of oil if the recipe uses melted butter. Utah State University Extension warns not to swap oil for a solid fat unless the recipe is written for oil or melted fat, because the finished product can differ significantly. Spreads labelled low-fat or reduced-calorie contain more water, so baked goods made with them are likely to be lower quality.

Frequently asked questions

How many grams are in a stick of butter?

A US stick is 8 tablespoons, which King Arthur Baking gives as 113 grams or 4 ounces.

How many cups is 250 grams of butter?

250 g is about 1.1 cups, or 2.2 sticks, using 113 g per half cup.

Can I use oil instead of butter?

Texas A&M AgriLife Extension says an equal amount of oil can replace butter when the recipe uses melted butter. Do not swap oil for creamed or solid butter, because the texture changes.

Is a stick of butter the same everywhere?

The 113 g figure is for a US stick. Where butter is sold in blocks, read the pack weight and use grams.
