Inputs
Cost and price
Add an ingredient with a bottle price and an amount.
How to cost a cocktail and set a menu price
Cost of each ingredient = bottle price ÷ bottle size × amount used. Add the ingredient costs and any garnish, ice or other extras to get the cost per drink. Pour cost percent = cost per drink ÷ menu price. Margin = (menu price − cost) ÷ menu price. The price that hits a target pour cost = cost ÷ target percent.
Worked example. A Negroni with 1 oz each of gin ($30 for 750 mL), sweet vermouth ($18) and Campari ($36), plus $0.30 of garnish and ice. The three pours cost $1.18, $0.71 and $1.42, so the drink costs $3.61. Sold at $14, the pour cost is 25.8%, the profit is $10.39 and the margin is 74.2%. To hit a 25% pour cost the price would be $14.45. The prices are made up for the arithmetic.
This is the multi-ingredient version. For the cost of a single pour of one bottle, use the pours per bottle calculator. Menu pricing also has to cover labour, rent and spillage; pour cost is one input, not the whole picture.
Frequently asked questions
How do you calculate the cost of a cocktail?
For each ingredient, divide the bottle price by the bottle size and multiply by the amount in the drink. Add the ingredient costs and any garnish or ice. That total is the cost per cocktail.
What is pour cost percentage?
Pour cost percent is the cost of a drink divided by its menu price. In the example, $3.61 divided by $14 is 25.8%.
What menu price gives a 25% pour cost?
Divide the cost per drink by 0.25. The example drink costs $3.61, so $14.45.
What is a good pour cost?
There is no single published figure, so this tool does not claim one. Pick a target that covers your other costs and enter it as the target pour cost.
