How feeding ratios work
A ratio of 1:2:2 means one part retained starter, two parts flour and two parts water, measured by weight. With 36 g of starter, that produces 72 g each of flour and water, for 180 g total.
The displayed feed hydration is the added water divided by added flour. Equal flour and water is 100% hydration. Rise time is not calculated because starter activity varies with temperature, culture and flour.
